)-- The new Eataly store was inaugurated in Bari last July, the chain’s most recent hit that offers high quality Italian food products, combining tasting and sales in the same comfortable and stylish space.
The opening of the Turin store in 2007 gave way to a success that has exploded in no time, grinding out sales and openings in the main cities of Northern Italy at first and then in Japan, followed by the opening of the New York store in 2010, which at full tilt bills 85 million dollars and employs 800. In June 2012 they opened their largest store in Rome, refurbishing the Ostiense Air Terminal, a building that was made for the 1990 Italian World Cup and was then left to fall into ruin, and employing 400 people.
A success story that has led the group to a turnover of 250 million euros in 2012, with a gross operating margin of 10% and more than 3,000 employees in the world.
Apart from Bari in 2013, new openings are scheduled in Florence, Italy and Istanbul, Dubai and Chicago in the rest of the world, with a turnover that will grow by 20%, reaching about 300 million euros. In 2014 they will open the new stores in Milano Smeraldo and Piacenza alla Cavallerizza.
Specifically the new store in Bari is spread over an area of 8,000 square meters in the monumental part of the Fiera del Levante, and gives the utmost attention to local products in order to promote local businesses.
There are in fact more than 1,000 manufacturers represented on the shelves in Bari, 40% of which come right from the Puglia region.
As in the other stores, Bari Eataly includes various dimensions: areas for catering (with 15 thematic restaurants), teaching and shops all coexist and intermingle, enriching one another. A "merger" that is easier thanks to spaces and internal volume design and distribution: shops, corners for fast food, laboratories for processing (cheese and pasta factory), cafes, wine bars and restaurants, one after the other without interruption.
Overall, the Bari store can serve over 1000 visitors at the same time. The presence of classrooms also provides customers with a full educational program.
As said by the store manager Mrs. Michela Quaranta: ” The opening of our store confirmed the success of the Eataly formula, which serves the best of local and artisan products at reasonable prices by reducing the products’ distribution network and creating a direct contact between the producer and the final distributor.”
Eataly Bari has a generous size space with a strong load variability according to the time of day and the day of the week and variable loads due to the high number of operating kitchens and the amount of customers. The greatest design difficulty, however, has been linked to the presence of a huge variable amount of extraction air, through about 40 hoods installed on kitchens and on furnaces for a total maximum extracted air of 116,000 m3 / h.
In order to always provide ideal comfort in the store, both in Summer and Winter, an air to air HVAC system divided into 5 zones and based on 5 Climaveneta rooftop units has been designed.
In particular the designer has selected 3 i-WHISPER ENTHALPY 0553 and 2 i-WHISPER ENTHALPY 0653 for a total of 1500 kW installed. They are reversible air-cooled, high-efficiency, all-in-one rooftop units, with enthalpy recovery and an inverter scroll compressor for the complete thermo-hygrometric air treatment and the recovery of the rejected heat for the air renewal.
The unit guarantees maximum indoor comfort by always supplying air at the desired temperature, with a precision of 1°C and without causing discomfort for the occupants, also during critical operations like dehumidification or low load.
Precise supply temperature control means energy savings and the highest level of comfort attainable for packaged units.
i-Whisper units are linked to a reversible unit with a total recovery air source NEXS-NR 0604 by Climaveneta. The unit simultaneously provides hot and cold water for the AHU, installed to maintain a constant temperature and humidity level in the store.
