Matador Cantina Opens Its Doors to the Public in North Orange County

Located in the heart of Historic Downtown Fullerton, the cantina offers a fresh mix of traditional and contemporary Mexican cuisine.

Fullerton, CA, April 29, 2009 --(PR.com)-- Following various private functions and a pre-opening celebration, Matador Cantina in Historic Downtown Fullerton, officially opened its doors to the public April 6, 2009. Guests filtered through the doors throughout the day and evening to indulge in the new look and flavor of the city’s latest dining and social destination.

“Everything really came together at the last minute and I couldn’t be more pleased with the results,” said managing partner Mario Marovic. “Our intention was to provide the community with great Mexican food with superior customer service in a unique, warm and inviting environment, and I believe we succeeded in doing so.”

Open daily for lunch and dinner, the menu is a fresh fusion of traditional and contemporary Mexican cuisine by Executive Chef David Dennis. While the offering includes many familiar favorites such as Chile Rellenos, Enchiladas, and Fajitas, everything is uniquely prepared and refreshingly original in concept, taste and presentation. Fusion items such as Chorizo Ravioli, a home-made ravioli infused with a spicy blend of chorizo, beef and cortija cheese topped with chipotle cream sauce, has quickly become a house favorite; as has Shrimp Diablo, sautéed shrimp in a spicy Tequila lime tomato sauce over rice, and a unique twist to the classic Chile Relleno, with chicken, Oaxaca cheese, cream cheese, and green chiles stuffed in a tortilla-crusted poblano chile. To further excite the palate, each selection may also be wonderfully paired with an array of Spanish, and South American wines.

Those who leave room for dessert are treated to further original selections, such as Pastel Zanahoria, a fresh-made Mexican carrot cake covered in a cinnamon caramel sauce, and Enchiladas de Chocolate, two crepes stuffed with caramelized bananas and drizzled with chocolate ganache.

Aside from margaritas and mojitos, even the signature drink menu is comprised of exotic and exceptionally tasty offerings, including a Jalapeño Martini, made with in-house-infused jalapeño Hornitos Tequila, and a premium Matador Bloody Mary topped with ceviche.

In addition to an express lunch menu offered Monday through Friday, Saturday and Sunday Brunch is served every weekend from 9am to 2pm, which, in addition to flowing Champagne, includes everything from Spanish omelets, Eggs Benedicto, pancakes and French toast.

Housed within the oldest building in Fullerton’s trendy Historic Downtown district, the décor is as unique as it is appealing, providing relaxing, mood-setting atmosphere.

In addition to a custom wrought-iron bullhead statuette over the bar, sparkling ruby chandeliers and custom made wrought-iron lanterns, a flickering candle lit wall further defines the uniqueness of the space.

Guests have the option to dine in cozy leather booths or traditional high-top seating in the main bar/dining area, or more casual dining offered at the historic 55-foot-long bar or in the lounge with a wraparound leather banquette, lounge tables and cushioned ottomans.

Founded by owners Mario Marovic, David Bailey and Rob Hallstrom, the cantina will operate under Marovic, a veteran second-generation restaurateur with numerous restaurants and lounges throughout the county.
