Maple Leaf Farms Duck Wings Receive Spirit of Innovation Award

Duck wings from Maple Leaf Farms has received a Spirit of Innovation Award at the Prepared Foods New Products’ Conference 2009.

Palm Beach, FL, September 27, 2009 --(PR.com)-- Maple Leaf Farms fully cooked Duck Wings received a Spirit of Innovation Award at the Prepared Foods New Products’ Conference 2009 held in September. The Duck Wings were awarded third place in the Foodservice category

The Spirit of Innovation Awards were created by Prepared Foods magazine and Ventura Foods to recognize innovative new products and the teamwork and creativity that make new products possible. The award recognizes exceptional and innovative product development teams for their pioneering work on exciting new products.

There are two Spirit of Innovation Award categories, Retail and Foodservice. Maple Leaf Farms entered its Duck Wings into the Foodservice category.

Maple Leaf Farms Duck Wings bring new life to the wing phenomenon. Wings are familiar to the traditional food service consumer, but duck is unique and allows for a myriad of novel sauce combinations. If the target demographic is a classic wings consumer, the restaurant can sauce the wings with buffalo, BBQ, or teriyaki sauce. If the target demographic is a white table cloth customer, the chef can become more creative with upscale sauce additions. Plus, the wings offer a great value for duck on a menu.

Duck Wings allow for a restaurant to have a duck item on its menu that prepares in 4 minutes at an attractive price point. The wings come fully cooked – produced in a unique cooking procedure that tenderizes the meat but retains the crunchy outside coating. The tender, delicious flavor of duck in a crispy coating creates a nice contrast in texture.

Maple Leaf Farms research and development team for Duck Wings was headed by Carmen Darland as the product and formulation lead. The production and launch of the product was a team effort, involving employees from across the company and an outside co-packer. Working together, the team created a product that provides customers with the uniqueness of duck in a familiar format.

A panel of industry experts evaluated each nomination and product on a variety of criteria:
1. Coordination among the company’s departments and/or vendors. This will be determined primarily through the product’s nomination form, but the judging panel will also evaluate the product’s complexity.
2. The ingenuity of the product’s concept. This may also include the uniqueness of the package.
3. Sensory quality of the nominated food or beverage.

The October 2009 issue of Prepared Foods magazine will feature an article announcing the 2009 winners. The award has honored companies large and small throughout the industry, be it dairy-based desserts or meal components, beverages, baked goods or soups.
