Chef Jon Bonnell Shares a Flavorful, Simple 10-Minute Recipe from His New Cookbook: Creamy Pico De Gallo Shrimp

Fort Worth, TX, April 10, 2012 --(PR.com)-- Need a quick dish to serve at your spring fiesta? Chef Jon Bonnell shares his recipe for Creamy Pico de Gallo Shrimp, from his new cookbook Jon Bonnell’s Texas Favorites.

This simple dish can be prepared in less than 10 minutes and its fresh Texas flavors are a guaranteed hit with your guests.

Tip: Adjust the heat by adding or subtracting jalapenos or more of the seeds.

Creamy Pico de Gallo Shrimp

12 large wild-caught Texas shrimp (16 -20 count)
2 tablespoons butter
¼ cup diced purple onion
2 cloves garlic, minced
2 fresh jalapenos, seeded and diced
1 ounce dry white wine
1 Roma tomato, seeded and diced
1 tablespoon chopped fresh cilantro
½ cup heavy whipping cream
Juice of 1 lime
¾ teaspoon kosher salt
Pinch of freshly ground black pepper
1 ½ cups cooked white rice

In a hot pan, sear the shrimp in butter for 30 seconds on each side, then remove the shrimp and set aside.

In the same pan, sauté the onion, garlic and jalapenos until the onion becomes soft, approximately 3-4 minutes.

Deglaze the pan with splash of dry white wine. Let the wine reduce by half and then add in all remaining ingredients (except rice), including the partially cooked shrimp.

Simmer the contents until the cream has reduced to a slightly thick sauce. Taste for seasonings and plate the entire contents of the pan on a large platter over rice. Serves 4.

Tip: Garnish with freshly snipped chives or micro cilantro
