Erie 2 BOCES Carrier Culinary Students Place First in State ProStart® Competition

Moving on to national competition in Anaheim, California

Angola, NY, April 12, 2015 --(PR.com)-- The Erie 2-Chautauqua-Cattaraugus BOCES Carrier Educational Center’s ProStart® SAUTE club recently placed first in the Management Competition of the New York State Restaurant Associations Educational Foundations ProStart Invitational. The contest was held at the Culinary Institute of America in Hyde Park, New York. They will now compete against 41 other high school teams from across the United States at the National Restaurant Associations ProStart Invitational in Anaheim, California April 18-20. The students Abbi Hoffman (Silver Creek) Symone Maracle (Lake Shore), Jarek Kawski (Silver Creek), Clay Jones (Silver Creek), and Zach Congdon (Eden), with alternates Tadora Logan (Lake Shore), and James Moores (Eden) were led by Instructors Jim Kuras, Pattie Laidlaw and Mentor Sandy Kaletta.

“We are extremely pleased to have taken first place at the state level and are excited to be representing Erie 2 BOCES and the students home schools at the National Invitational,” said Jim Kuras, culinary arts instructor at the Carrier Center. “The hard work and dedication to culinary excellence these students put into this competition is second to none and they have proven that with this win.”

The Management Competition of the Invitational involves creating a restaurant from the ground up. From marketing to day-to-day operations, students are charged with designing a restaurant including aspects such as overall concept, recipe development, food and supply pricing, staffing, marketing, floor layout and décor, and payroll.

The Carrier team chose “The Great Outdoors” as their theme and punctuated it with appetizers like Swamp Chomps (fried alligator nuggets) to entrees like King of the Forest (crown roasted rabbit wrapped in a rabbit tenderloin) and desserts like Berry Cheesecake Shooters.

Backed by a full marketing plan that included outdoor signage and advertising, students presented their proposal accompanied by visuals to a panel of industry judges. They were then asked to participate in a battery of problem-solving challenges similar to what restauranteurs face on a daily basis.

The NYS Restaurant Association Educational Foundation (NYSRAEF) was developed to support the National Restaurant Association’s Education efforts at the state level. The Foundation’s primary focus is to strengthen the restaurant industry in New York State by developing a stronger workforce and building the next generation of industry leaders. More than 50 restaurant owners, managers, chefs and college instructors from across the country judged the teams, competing for trophies, medals, and scholarships.

The Carrier team was awarded a check for $5,000 from United Health Care® for their first place finish and is using the funds to help defray the cost of the trip to Disneyland® in Anaheim.

“This opportunity in California is exciting, to say the least,” added Kuras. “Being invited is honor enough, but this team is hungry for more and will pull out all the stops to succeed at the national level. We are all proud of these students and we know they are hungry for another top placement. This is Real Life Learning at its best.”
