Inspired by a friend’s pumpkin bread baked in a coffee can, “The Coffee Can Baking Book: 50 Cakes and Breads Baked in Coffee Cans” extrapolates on techniques that began in the early 1900s, when people used their ingenuity to use what was at hand to help their families survive. Bornstein developed and tested the recipes himself, eating his mistakes and eventually crafting 50 mouth-watering recipes. The book includes tips for measuring and mixing ingredients, baking times and temperatures, testing for doneness, and removing and cooling the finished product.

Traditional coffee can recipes as well as modern recipes can be adapted for this thrifty – but fun – method of baking. Cake recipes include applesauce, orange rum, chocolate zucchini and pineapple pecan; quick breads include beer-cheese, gingerbread and mango; yeast breads featured include buttermilk, challah, double olive and pumpernickel. Bornstein conveniently offers a source for buying professional anodized aluminum cans made by a major bakeware company. These cans are the approximate size of the old coffee cans, which are almost impossible to find and may not be safe to use. These recipes can also be used with standard baking pans, as long as baking times are adjusted.

Author Allen Bornstein learned to love cooking and baking thanks to his mother, a self-taught, talented baker and cook. The retired pharmacist, who has lived for a few decades in Boulder, was raised in the Blue Ridge Mountains of Virginia and spent time in Florida. Bornstein, who has cooked and baked all of his life, also turns his talents to wood sculpting and playing jazz saxophone. He has a son, daughter, and twin granddaughters.
