Taking inspiration from one of the great art masters, Chef Tom Burney presents a delectable sweet treat with "Van Gogh’s Sunflowers," featuring dehydrated pineapple with a basil and mint cream centre.

"Colour"
A modern checkerboard created with contrasting cubes of compressed watermelon, smoked cucumber, basil jelly and feta cheese, "Colour" is a delightful medley of flavours that will please any palate.

"Red Star"
A nod to contemporary street artist Shepard Fairey - who is oftentimes inspired by old Chinese propoganda posters - the fresh flavours of this canape start with cool refreshing cucumber, on top of which sits a single basil leaf and a tart raspberry fluid gel red star drawn on a canvas of French Brie.
