Reinventing the Winery, One Plate at a Time

Prima Materia winery, a new venture by chef and winemaker Pietro Buttitta, is launching a unique popup wine dinner series in the San Francisco Bay Area. Pietro will be both cooking the multi-course meals and pouring his wines and special previews with the goal of finding partners to find the winery a permanent home.

Acclaimed winemaker and chef Pietro Buttitta is not the first person to launch a series of pop up events to support his food and wine project. But, he is the first who will be pouring his own wine with the food he cooks.

Until 2008 Buttitta was working under chefs such as Hiro Sone at Terra Restaurant, and Philippe Boulot among others in Portland, Oregon. He eventually became an executive chef and restaurant consultant. But a chance to help with grape harvest in 2007 changed his plans, and he then turned to growing grapes and making wine full time.

“I grew up in agriculture, and after spending years in kitchens, working in the sun all day again was amazing. I love the natural cycle of bud break to crush to bottling, and tuning in to wine really altered the world of food for me as well,” said Buttitta.

As the winemaker for Rosa d’Oro Vineyards in Lake County he planted vines and made 90+ point wines from obscure grape varieties few had ever heard of. He was soon giving lectures on wine history, teaching seminars, and achieving sommelier certification. He continued cooking wine dinners at the winery as well, and began planning something unique, a winery and food project called Prima Materia.

“Prima Materia will be more than just a winery, a tasting room or a regular restaurant. It will integrate food and wine in a way that preserves and explores regional histories, kind of like Slow Food. It will be accessible; fine-dining execution with an order counter, our own wine on tap and in bottle, some other Old World wines, guest chefs and a supper club. It will also be different in focusing on the evaporating past instead of future fads.”

To support his project Buttitta will launch a series of Prima Materia wine dinners and pourings starting May 22nd. The events include pop up events with Feastly in San Francisco, a new vintage preview and appetizer night at Solano Cellars, and events to be announced in Oakland.
