Innovative Spa Cuisine Adds to Award-Winning Culinary Tradition

Virginia Beach, VA, March 03, 2018 --(PR.com)-- Atlantic Shores Retirement Community in Virginia Beach, Virginia, has added distinctive, spa-influenced cuisine to their award-winning menus with the recent addition of Executive Chef Kyle Pafford.

In his position, Kyle oversees every culinary aspect of Atlantic Shores’ three on-site restaurants, developing original, delicious dishes for daily meals, as well as private events and catered functions for the 100-acre community’s 600 residents and their guests.

Known for his distinctive, healthy dishes that push the envelope of flavor using fresh, organic ingredients, his career includes positions at top spas and retreats across the country, and culinary experiences from around the world.

Most recently, Chef Pafford served as Executive Sous Chef at Pisgah Inn, in North Carolina’s Blue Ridge Mountains, where he created innovative seasonal menus and daily specials utilizing fresh products from local farms.

Prior to that, he served as Executive Chef at The Pearl Laguna, an intimate wellness retreat in Laguna Beach, California, where he catered to guests with specific nutrient requests, specializing in fine-dining vegan and vegetarian entrees.

He has also produced his own yogurts and fermented vegetables, and shared his expertise in organic cooking classes and “Pop Up Farm to Fork dinners” featuring farm produce and meats. He even had a stint as Cheese maker at Goodale Farms, where he created a series of seasonal cheeses. Working alongside renowned chef Dan Barber, Kyle also worked from the greenhouse to the kitchen to create seasonal masterpieces at Blue Hill, within the Stone Barns Center for Food and Agriculture in Pocantico Hills, New York.

Originally a passionate hobby he shared with his family and friends, cooking naturally evolved into a full-time career for Kyle, launched after obtaining his Bachelor’s Degree in Culinary Nutrition from Johnson & Wales University.

According to Kyle, “Through my training and travels I’ve learned that you can prepare food healthily and nutritiously and still have it taste delicious. I enjoy using in-season products that also help support local farmers. I always tell my clients and staff that ‘less, is more’ -- let the food speak for itself instead of covering it up with multiple ingredients.”

In his new position, Chef Pafford works alongside Atlantic Shores Food and Beverage Director Eric Doarnberger, and the community’s award-winning culinary team to fuse his nutritional background and creative culinary flair in creating flavorful, savory/sweet dishes, as well as vegan, vegetarian and raw cuisine.

Kyle shares, “I was excited to join Atlantic Shores because I can continue to experiment with a lot of different styles, using fresh, local ingredients to creative simple, upscale offerings where the food shines for what it is. I also enjoy being able to collaborate with a very positive culinary team, and work hand in hand with the residents to create entrees and catered meals that bring smiles to everyone’s faces.”

Chef Pafford’s style and personality shine during monthly resident Chefs Table events, where he creates a three-course meal personally prepared in front of guests, paired with specialty wines chosen by a Sommelier. He also shares his creative recipes and thoughts on the culinary creative process with the world as contributing blogger on the popular WHRO/PBS “Let’s Eat” blog.

Kyle’s talents will also extend Atlantic Shores’ reputation as culinary leader in their industry, showcasing his inventive cuisine in area competitions against premier local restaurants. Atlantic Shores’ history of award-winning culinary excellence includes the People’s Choice and Chef’s Choice awards at the March of Dimes Signature Chef’s Event, where their dishes were selected for technique and artistry most appreciated by other culinary professionals. Celebrity and media judges also selected Atlantic Shores for the “Most Creative Recipe” award at the prestigious Taste of Hampton Roads competition.
