The Matador Cantina Brings Authentic Mexican Cuisine to North Orange County

The Matador Cantina is set to open its doors to the public in late March, 2009 in the heart of Historic Downtown Fullerton. The menu will feature a fresh fusion of native and contemporary Mexican-inspired cuisines.

Fullerton, CA, March 01, 2009 --(PR.com)-- The Matador Cantina is set to open its doors to the public in late March, 2009 in the heart of Historic Downtown Fullerton. The Matador’s near 4,000 square-foot space, which most recently housed The Rockin Taco Cantina, has been completely transformed. The new look is both upscale and casual, providing an elegant dining atmosphere, while also comfortably inviting.

The menu will feature a fresh fusion of native and contemporary Mexican-inspired cuisines with dinner entrees, including Tres Enchiladas with choice of mole, green or red sauce, blackened Rib-Eye with a chili-cilantro rub, and Shrimp Diablo, served with spicy Tequila lime sauce with mashed Chipotle potatoes. Entrees will be affordably priced from $8 to $18. An Express Lunch menu with traditional favorites will also include items such as Arroz Con Pollo and delicious beef and chicken wraps. The Express Lunch, as well as Curbside Service, will allow guests to dine on the quick and easy during their lunch break or enjoy the convenience of take-out.

Ideally tailored to the value minded, the menu includes an impressive list of signature and traditional Mexican appetizers, as well as numerous a la carte items. Guests will also enjoy fresh tableside guacamole and Queso Fundido con Chorizo. As host to Fullerton’s original Taco Tuesday, The Matador is proud to carry on the popular tradition, albeit with four varieties of $1.50 gourmet tacos that are made-to-order using only the finest, fresh ingredients.

Projected dessert favorites include Pastel Zanahoria, a fresh-made Mexican carrot cake covered in a cinnamon caramel sauce, Tres Leches cake sprinkled with toasted coconut and Dos Leches ice cream topped with a banana caramel rum sauce.

While Matador Margaritas and festive Mexican Mojitos will be popular signature drinks, a wine menu comprised of well-known and boutique vintages from Spain, California and South America will provide diners a palate-pleasing alternative. Guests will have the option to dine in cozy leather booths or traditional high-top seating in the main bar/dining area, or more casual dining offered in the lounge with a wraparound leather banquette, lounge tables and cushion ottomans.

In addition to the venue’s exposed historic brick structure, hand-made wrought iron chandeliers, an impressive candle-lit wall creates a warm and decidedly intimate ambiance. Original oil-on-canvas paintings and a magnificent iron bullhead statuette further hint to the space’s extraordinary décor.

The centerpiece attraction is an impressive 50-foot-long bar, paired with hand-made iron, cushioned barstools. Sports fans will pay particular attention to a bank of 50-inch high-definition Plasma TVs, each custom framed within the rich dark woods and intricate details of the massive 14-foot-tall back bar.
