The aim of the contest is to reinforce Le Méridien’s passion for cuisine, as well as a starting point to highlight the brand’s unique approach to Coffee Culture. Shane’s recipe for ‘Ramel Coffee’, was chosen among 110 submissions from Le Méridien hotels around the world by Master Barista for Le Meridien, Fritz Storm. ‘Ramel Coffee’ was concocted using a medley of ingredients such as condensed milk, cocoa power, caramel syrup and double espresso, topped with a dollop of milk foam. Shane’s idea for the recipe came when he was trying to blend local and western coffee cultures. It took numerous attempts of layering the ingredients, trial and errors to perfect the infusion of tastes.

Born in Sabah, Malaysia, 23 year old Shane began his career as a part time bartender at Renaissance Hotel Kuala Lumpur in 2003. He joined Le Méridien Kuala Lumpur’s pre opening team as a bartender in 2004. Shane’s hard work and dedication earned him a promotion to Bar Captain in 2007. Prior to joining the competition, Shane and his team of bartenders has received adequate training by certified illy barista, Keith Chee, from Classic Coffee & Beverage, the hotels illy coffee supplier.
