The Red Room Tapas Lounge Welcomes Chef Marshall Smith

Downtown Raleigh’s Spanish-Influenced Restaurant Adds Classically Trained Executive Chef.

Raleigh, NC, May 01, 2011 --( Dean Ogan, owner of Rocky Top Hospitality (, has announced that Marshall Smith has joined The Red Room Tapas Lounge, the only Spanish-influenced tapas lounge in downtown Raleigh, as executive chef. After earning a choice internship through the New England Culinary Institute in Montpelier, Vt., Smith received formal training in Chambéry, France before returning to his hometown of Raleigh in 2004 to serve as executive chef at Ogan’s first restaurant venture, Michael Dean’s Seafood Grill and Oyster Bar, which recently transitioned into being the second location of Rocky Top’s popular Tribeca Tavern. Prior to joining The Red Room, Smith served as executive chef and general manager at Savoy, a Raleigh restaurant featuring contemporary French cuisine designed as a multi-course experience influenced by seasonal availability.

- The Red Room recently launched its Sunday Breakfast Buffett, featuring a spread of made-to-order omelets, pancakes, waffles and other Red Room specialties from 10 a.m. to 2:30 p.m. every Sunday.
