After experiencing the health restoring potential of a vegan diet, Lydia Eskander recognized that her own native Lebanese cuisine – including virtually every dish from creamy rich hommos to tangy baba ghanouj – fit perfectly into the nutritious vegan diet.

After arriving in America in 1984 from her native Lebanon, the author found that new and unhealthy eating habits combined with the stress of her daily commute to Manhattan had begun to take a toll on her health. She began having severe pain in her joints, especially her wrists. After unsatisfactory treatment with anti-inflammatory drugs, the author ran across a prominent doctor who advocated an alternative, natural remedy.

She began taking flax seed oil and, to her great relief, her pain was soon gone. Then she learned of two people, one diagnosed with colon cancer, the other with inoperable cancer, who both became cancer free after being put on a diet of raw vegetables and fruit. Lydia continued with a vegan diet herself and within months she had lost fifteen pounds, had corrected a severe hormone imbalance and recovered from several other health issues.

Recognizing the similarity of these vegan diets with her own native Lebanese cuisine, she began compiling recipes that offered the succulent flavors of Lebanese dishes with the natural therapy of a vegan diet. Contrary to the belief of some, Lydia points out that one can get one’s daily requirements of protein and calcium from vegetables and legumes.
