Bagus started his culinary career in 1994 in Amanusa, and he will bring his 22-year working experience to the kitchen of the resort. Prior his tenure at Samabe, Bagus joined the culinary team of first-class hotels in Java and Bali such as Amatera, Amanusa, Mulia Bali, and more.
His new menu highlighting a locally driven taste will be debuted in August. He mentions Bebek Taliwang (Taliwang Duck) to epitomize the traditional taste he serves. The duck should be boiled, roasted, and then grilled to make the seasoning flavors seeped into the meat. The seasoning used by Bagus is the mixture of fresh red chili, dry chili, garlic, and galangal.
