Cheese built up and stuck to the hopper walls, causing clogs and stopping the flow through the discharge chutes. The production line would shut down and employees had to climb up on the equipment to clear the problem - usually by using hammers to bang on the hopper walls. Once they cleared the clogs, employees needed to resterilize the entire area to prevent contamination. This resulted in a significant amount of wasted product and lost production time.

In addition to the wasted time and product, hammering on the hopper walls caused the development of "hammer rash" - small dents and divots in the hopper wall - which in turn caused the sticking and clogging to occur more frequently, further compounding production problems and compromising the equipment longevity, too.
