World Renown Chef Ressul Rassallat Debuts Bold Flavors in Tapenade's Spring/Summer Menu

After a successful soft launch of celebrity chef Ressul Rassallat's debut restaurant, Tapenade, he is adding new bold flavors that highlight fresh ingredients and flavors in unique dishes that will feature his Mediterranean influences.

Los Angeles, CA, May 22, 2013 --( Tapenade Restaurant and Executive Chef Ressul Rassallat announced today that they are introducing new flavors and offering regional varieties of favorite dishes in their debut menu for Spring and Summer.

After a successful soft launch in December of last year, Tapenade has delighted guests with unique dishes and small plates perfect for sharing and exploring different flavors and featured ingredients from Italy, France and other Mediterranean regions.

Executive Chef Ressul Rassallat's heritage along with his extensive culinary experience in France and Italy has inspired him to create distinct regional versions of some of his signature dishes.

His crispy brussels sprouts are a guest favorite, presented with capers, red wine vinegar and almonds. This signature dish reflects his Persian background and evokes traditional flavors. Rassallat is debuting a complementing French version, with crispy roasted brussels sprouts, hazelnuts and parmesan and an Italian rendition featuring pine nuts and black currant. The variations will allow diners to experience similar dishes with distinct regional flavors.

"Nobody is doing this in Los Angeles right now," said Rassallat. "I am interpreting a dish the way it would be in different regions, reflecting their flavors. I am very excited to bring it to Tapenade's diners."

Tapenade will also offer a lamb tasting on its menu, with three different variations of lamb dishes reflecting Persian, French and Italian flavors.

Rassallat is also committed to using the best seasonal, local and fresh ingredients. Seasonal items like peaches, avocados and artichokes will be featured on the menu in bold yet simple dishes. Tapenade will offer a roasted peach and goat cheese salad with almonds as well as a regional favorite: Moroccan flatbread with lamb belly, goat cheese and dates.

"A lot of people have tasted these components before, but what I am doing is putting together these flavors in beautiful combinations, so they complement each other perfectly," said Rassallat.
